Rishi helped create a new Yorkshire-inspired ice cream flavour during a visit to Lacey’s Cheese in Reeth.
He joined Simon Lacey at the family-run business to develop a new addition for its ice cream venture, The Udder One.
Lacey’s Cheese was established by Simon and his wife Amanda and produces a wide range of traditional cheeses. The business has built a strong reputation locally and attracts visitors from across the region.
More recently, the family has expanded with The Udder One, run by their daughter Poppy, producing ice cream using goats’ milk and developing new flavours alongside the core cheesemaking offer.
Rishi and Simon brought together Wensleydale cheese and fruitcake, a well-known Yorkshire pairing, into a single flavour.
The visit focused on how traditional local produce can be adapted into new products, with the Wensleydale and fruitcake combination reflecting a long-standing Yorkshire tradition, reworked into something different for customers.
Rishi also spent time discussing the day-to-day operation of the business with Simon, including how the newer ice cream offer is complementing the established cheesemaking side and helping to broaden its appeal.
The business also runs popular cheese-making and ice cream-making courses, giving visitors the opportunity to learn the process first-hand.
